Cooperative Extension wants your potato recipes

CCE seeks 100 recipes for 100 years

Do you have a favorite potato recipe? To help celebrate the 100th anniversary of Cornell Cooperative Extension (CCE) of Columbia & Greene Counties, we're looking to collect 100 potato recipes to share during the Columbia County Fair which runs from August 30 through September 4, 2017. Six recipes will be randomly selected and those submitters will each receive a certificate for two free CCE baked potatoes that they can redeem during the Columbia County Fair.

CCE’s baked potato booth is located in Columbia Hall on the Chatham Fairgrounds. Baked potatoes will be served Wednesday, August 30 from 12 noon to 7:00 pm and Thursday, August 31 through Monday, September 4, from 11:00 am to 7:00 pm. The baked potato booth will feature local potatoes from Staron Farm which is located in Valatie, NY.

Email your recipe to Theresa Mayhew, Community & Economic Vitality Resource Educator, at tcm5@cornell.edu by August 22 or mail them to her attention at 479 Route 66; Hudson, NY 12534. Please include your name, email address and daytime phone number. Recipes can be for russets, reds, whites, yellows (Yukons), purples and even sweet potatoes. Any other questions?
